Not many people know that National Nutrition Month is celebrated in March. People are invited to learn how to develop healthy eating and physical activities habits. To mark the date, Claudia shares seven nutritious recipes from all around the world.
1. India
Dal, also known as beans and pulses, is one of the most common healthy foods originating from India. Especially for vegans and vegetarians, dal acts as a great source for increasing their protein intake. Pulses are highly beneficial containing many dietary elements such as vitamins, fibre and potassium. They also help in digestion and are a great option for people with diabetes.
2. Romania
Most Romanians have a bowl of soup every day. There are hundreds of soup recipes, and Romanians find the dish highly nutritious. Most recipes usually contain vegetables and meat, but the broth can also include homemade noodles or rice. It is, therefore, rich in vitamins and protein, whilst providing carbohydrates. Especially during the winter, doctors recommend having soup as a way to protect our bodies from infections, as it contains anti-inflammatory ingredients.
3. Spain
Escalivada is a type of salad that is popular in the region of Catalonia, bringing out an array of flavours from the local vegetables. Usually made from aubergines, potatoes, peppers and artichokes, it is a source of vitamins, and can help you maintain a balanced diet. It can be served with seafood, providing a low number of calories.
4. Mexico
One of the healthiest meals in Mexico is the bean burrito. Black beans are low in fat, high in fibre and provide plenty of protein. If you prefer the traditional refried beans, pinto beans are a healthier replacement. They provide a similar flavour, without the extra fat. The recipe includes various spices, showing that healthy food can still be tasty. Burritos also include a variety of vegetables, such as salad, avocados and tomatoes.
5. Morocco
The chicken tagine with apricots and olives is a healthy chicken stew. It has a warm, spicy flavour from ras el hanout, a traditional Moroccan spice blend. Providing a high level of protein, the stew contains both chicken and lentils, and a very low number of calories: only around 330 per serving.
6. South Korea
Korean food is usually considered to be healthy, utilising many vegetables and sources of protein. Among the healthiest meals is soondubu jjigae, a spicy stew, made with soft tofu, mushrooms and other vegetables and optional seafood. It has a very high concentration of Vitamin A and Vitamin C. It is low in saturated fat and a great source of potassium.
7. Ethiopia
The Ethiopian version of porridge is one of the most nutritious foods you can have. Kinche, or cracked wheat, is often served for breakfast, but it can also be topped with lentils or collards. With only 140 calories per serving, it provides a big quantity of magnesium and potassium.
